If there is one thing you should know about me, it's that I LOVE coconut! I love all things coconut: curries, Almond Joys, coconut cream pie, etc... You name it. I love it! Well except for that icky coconut water I once bought at Costco. Lesson learned on that! Anyway, I digress. The other day I was at a friend's apartment and he offered me some kind of nut snack. Despite the fact that I had been feeling fat I partook and when I did I was heaven! They were Mmmine Coconut Encrusted Cashews from Costco. They are delicious! They had combined my favorite nut, cashew (in case you weren't listening), with coconut. Then the next day I had to head to Costco solely to purchase these nuts. Even now as I blog about them, I had to move them far away to the back of my cupboard. You've been warned!
